2 Zucchini
2 Tomatoes
Nuts
1 TSP Lemon juice
1 TBSP Pomegranate molasses
1 TSP salt
12 TSP black pepper
1 TBSP olive oil
Method:
- Grate zucchini pieces with a wide grater.
- Add hot water to zucchini, leave for 1 minute then take zucchini out of water.
- Cut tomatoes into small cubes.
- Roast nuts.
Add tomato cubes to zucchini, garnish with roasted nuts then add lemon juice, olive oil, salt and pepper.
